Eggs rancheros with
pasilla sauce

Ingredients

8 Small sesame toasts

8 Eggs

7 Pasilla peppers from Del Mineral

1/3 Onion of Del Mineral

1 Clove Garlic

1 Cup of double cream cheese

1 1/2 Cup checken broth

1 Cup of black beans fron Del Mineral

Intructions

1. Boil the chiles with the onion and garlic for 10 minutes. Then blend them with the chicken broth and season with salt and pepper.
2. Prepara the fried eggs, serve them on toast spread with refried beans.
3. Bath with the sauce and finish with the soble cream cheese.

Eggs rancheros with

4 Cups of tortilla chips

1 Clove garlic

5 Tomatoes from Del Mineral

1/3 Piece of onion from Del Mineral

1 Guajillo chili from Del Mineral

1 Cup of double cream cheese

4 Eggs

1 Serrano pepper in slices

1 Cup of cooked bay beans Del Mineral

Instruccions

1. Remove the seeds from the chili. Boil ir for a few minutes in the chicken broth.
2. Add halt of the beans and blend the mixture. Return them to the pot with the whole ones and season.
Beat the eggs. In a large skillet, cook them to form scrambled eggs.

Thrown Eggs

Ingredients

 8 Eggs 

 1 tablespoon of oil 

 1/2 Cup julianned purple onion 

 1 Cup crumbled Cotija cheese 

 1/2 cup of parsley leaves 

 1 Wide chili from Del Mineral 

 1 Cup of cooker beans Del Mineral 

 1 Cup of chicken broth

Instructions

1. Remove the seeds from the chili. Boil it for a few minutes in the chicken broth.
2. Add half of the beans and blend the mixture. Return them to the pot with the whole ones and season.
Beat the eggs. In the large skillet, cook theam to from scrambled eggs.                                                                                                                            3. Dristribute the egg on the avocados, cover them with the bean sauce and finish woth a little cheese, purple onion parsley.              

Guajillo chili
enchiladas

Ingredients

1  Slice of onion from Del Mineral

2  Tomatoes from Del Mineral

5  Guajillo chilis from Del Mineral 

3  Tablespoon of Oil

1  Cup of water

12  Corn tortillas, passed tharougnt oil 

1/2  shreddes chicken breast 

1/2  Cup of cream, to acompany 

200 grs  Cotija cheese 

White onion to taste to decorate Del Mineral

Instructions

1. Remove the seeds from the chilis and soak team in hot water.
2. Sauté the onion, add the tomatoes cut into pieces and the chiles without letting them roast. Peel the tomatoes and blend the ingredients with water. Cook sauce for 10 minutes or util slightly thickened. Pass the tortillas thorought a little oil for a minute, take them out and put them on a plate, fill them whit chicken. Arrange there on cream and cheese.
3. Cut very thin slices of white and purple onion in to squares to serve.
