1. Soak the chiles in boiling water until softened. 2. Roast the tomatoes with the garlic clove on the griddle. 3. Blend the chiles, tomato, cumin and vinegar until a uniform texture is archived. Pour into a bowl and add onion.
Spicy drunk sauce
Ingredients
1 Splash olive oil
100 g Chile pasilla from Del Mineral
1 Onion from Del Mineral
2 Cloves garlic
6 Green chile (serrano)
1/2 liter of pulque
100g Old cheese
1 Pinch of salt
1 Pinch of papper
Instructions
1. Toast the chiles and devein them. Let them soak 30 minutes. 2. Drain the chiles and mixthem with the garlic. Add oil and pulque until thick. 3. Finally season the sauce with pepper and salt to taste. Prepare a tortilla and your cheese and enjoy.
Roasted chile tree sauce
Ingredients
50g Chile tree from Del Mineral
1 1/2Cup the water
1/3 Cup white vinegar (80 ml)
2 Cloves garlic
1 Tpsb. salt
Instructions
1. Remove the stems from the chiles, place them in a pan over medium heat and toast them slowly (move them constantly, so they don´t burn), set them aside and let them cool. 2. Place the chiles in the blender, along with the water and blend them . 3. Later add the garlic, salt and vinegar, mix them in a jar and refrigerate.
Macha sauce
Ingredients
20g Chile tree from Del Mineral
60g Morita chili
1/3 Cup of unsalted peanuts
150g Olive oil
2 Clves garlic
1 Tbsp. grain salt
2 Tbsp. of sesame
1 Tbsp. of brown sugar
1 1/2 Tsp. white vinegar
Instructions
1. Fry the ingredients, except, salt and vinegar. 2. Once all the ingredients are fried, place them in the blender, add the last ingredients and blend them. 3. Place in a jar and refrigerate, enjoy this list.
